With my taste buds in top condition, I followed hotel school Spermalie in Bruges. I had traineeships in Hotel Metropole**** in Switserland and whent through all the parties in the kitchen at the reputated hotel - restaurant Le Sanglier des Ardennes **** in Durbuy.

After the hotel school I continued studies at the Hotel management school in Namen, with again traineeships abroad. In got the inspiration in Sweden and South-Africa. “Picking fresh kiwis, mangos and lychees in South Africa was an amazing experience. Nowhere else they taste better than there. Next to the hotel where I was working they was a small nougat factory where they made this speciality with fresh macadamia nuts from the plantations in the neighbourhood. Delicious!” 

Another source of inspiration i found in Gloucestershire, Great-Brittan. At the Relais & Châteaux - Buckland Manor Luxury Hotel ***** I got to know the traditional British high tea on a top level. The scones, sandwiches and clotted cream where everywhere and the dream of starting my own tearoom was born. Back in Belgium I followed an ecudation to become a handcrafted icecream maker. Recently I started an education to become a chocolate maker, so one day my dream will become reality.   

The name Tivoli is related from the amusement park in Denmark. “I want to make people happy just as in the amusement park.”
